Grilled Chicken Spinach Strawberry Salad with Basil Vinaigrette
Salads are my favorite thing to eat when the weather starts getting warm and definitely puts me in the mood for Spring and Summer! Here in Florida we have warm weather all year, but I know some of you don’t get sunny days year round! Whether you are dreaming about the warm weather or already enjoying it, I have a new salad recipe that I tried that I promise you will love and get you ready for spring! With chicken, spinach, strawberries and a basil vinaigrette, it is packed full of flavor that will not dissapoint!
Here’s what you need:
2 chicken breasts
Fresh strawberries and /or blueberries
Pecans or walnuts
2-3 garlic cloves chopped
1/2 cup of sugar
3/4 cup of fresh basil
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup apple cider vinegar
1 cup oil
Process/blend garlic, sugar, basil, salt, pepper in a blender until the basil is finely chopped. Add the vinegar and oil in a fine stream, processing constantly until blended.
SEAL IN MASON JAR OR SOMETHING SIMILAR!
Here’s what to do:
Grill chicken ( I add garlic salt & pepper and grill on my george forman)
Toss spinach, strawberries, nuts
Slice chicken and add to top of salad
Drizzle with dressing and serve…ENJOY!!!
