I learned this recipe from my good friend Cathy when we lived in Kentucky, and I have been making it ever since for parties and special get togethers. I’m making it for Super Bowl tomorrow so I thought I would share it with all of you! It is so easy to make but it’s such a crowd pleaser!

Ohio County Caviar

Ingredients

  • 1 Can Black Beans
  • 1 Can Black Eyed Peas
  • 1 Can White Corn
  • 1 Small Jar Diced Pimento
  • 1 Cup Diced Red Onion
  • 1 Cup Diced Jalepeno
  • 1 Cup Sugar
  • 1 Cup White Vinegar
  • 1 Cup Canola Oil

Instructions

  • Drain and rinse black beans, black eyed peas and jalapenos. Mix together.
  • Add the corn and pimento to the mixture. (Do not drain these two)
  • Add the red onion.
  • On the stove, over medium heat, dissolve the sugar in vinegar & canola oil. Do not allow mixture to boil.
  • Pour over veggie mixture and chill overnight.
  • Drain before serving.
  • Serve with corn chips or tostitos.
