Keto Lemon Blueberry Muffins

Ingredients

  • 1 1/4 cups almond flour
  • 2 tbsp coconut flour
  • 1 1/2 tsp baking powder
  • 1 tsp xanthan gum
  • 1/4 tsp salt
  • 4 oz. butter
  • 2 tbsp coconut oil
  • 3 tbsp cream cheese
  • 1/4 cup sour cream
  • 1/2 cup pyure sugar
  • 3 eggs plus 1 egg white
  • 1 tsp vanilla extract
  • zest/juice 1 Lemon
  • 1 1/2 cup blueberries

Instructions

  • Pre-Heat oven to 350 degrees.
  • Mix almond flour, coconut flour, baking powder, xanthan gum and salt in a medium bowl.
  • In a large bowl, melt butter, coconut oil and soften your cream cheese in the microwave for about 30-40 seconds. Beat with an electric mixer.
  • Add in sour cream and pyure sugar and mix again.
  • Mix in eggs and egg white for 1-2 minutes.
  • Add in vanilla extract, lemon juice and lemon zest.
  • Combine your dry mixture into your wet mixture.
  • Fold in the blueberries.
  • Fill in muffin tin with liners and pour in your batter.
  • Bake for 25-30 minutes.
